Chickpea Blondies

This sweet blondie is a great way to get more fiber into your dessert. The recipe serves 9.

Ingredients:

  • 1 can (15 oz) chickpeas, drained and rinsed

  • 1/2 cup natural peanut butter

  • 1/3 cup maple syrup

  • 1 tsp vanilla extract

  • 1/2 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/3 cup vegan chocolate chips

Instructions:

1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper.

2. In a food processor, combine the chickpeas, peanut butter, maple syrup, and vanilla extract. Blend until smooth.

3. Add in the baking powder, baking soda, and salt, and blend again until well combined.

4. Stir in the vegan chocolate chips by hand.

5. Pour the batter into the prepared baking dish and smooth out the top.

6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.

7. Let the blondies cool in the pan for at least 10 minutes before slicing and serving.
